Mary’s Cherry Coconut Tarts

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 egg yolk
  • 1 cup grist mill flour
  • 1/4 cup ground almonds


  • 2 egg whites
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 1/2 cup coconut
  • 1/3 cup chopped maraschino cherries drained
  • 1/2 cup finly chopped pecans or almonds
  • 1/2 tsp almond extract



  • Form all ingredients. Mix to form dough. Press into muffin cups to form tart shells.


  • Beat egg whites until stiff. Fold in remaining ingredients. Mix. Spoon into prepared shells.
  • Bake on lower rack for 17 to 24 minutes at 350°F. Cool.
